Slice tempeh and fry in a bit of olive oil until crispy. Add a splash of white vinegar (or use a spray bottle) at the end and swirl the tempeh around. Be careful of it spattering when you add the vinegar. Set tempeh aside on a paper towel.
Toast the rye bread.
Apply Thousand Island Dressing to both sides of toasted rye bread. Add cooked tempeh. Add the sauerkraut. Use a fork to get it out of the jar and this will let it drain a bit. Top with Swiss cheese and then put this open faced in a broiler just long enough to melt the cheese. Top with the other slice of rye bread and enjoy!

This is a great veggie version of a classic sandwich. This can be made vegan with Vegannaise and soy cheese.
