To press the tofu: sandwich the tofu between two plates or cutting boards and rest a heavy can or book or container of water on top. Press for about 15 minutes and then drain the expressed liquid.
Preheat the oven to 400 degrees F. Lightly oil a baking dish.
In a bowl, mix together the soy sauce, oil and garlic. Cut the pressed tofu into 3/4-inch cubes. Gently toss the cubes in the soy sauce marinade. Spread the tofu in the prepared baking dish in a single layer.
Bake for 25 to 35 minutes, stirring once or twice, until brown and chewy.
Note: the cubes firm up a little when they cool, so they'll still be soft in the oven, even after they're done. Don't bake longer than 40 minutes.
